This Greek-Inspired Sheet Pan Dinner Is So Comforting

This week came together around a simple observation: dijon mustard shows up in three of the four recipes. Once I spotted that, the rest of the list almost wrote itself.

The balsamic chicken is the anchor. It uses balsamic vinegar, dijon, and honey โ€” and both the pasta and the honey mustard chicken pull from those same bottles. By recipe three, I’d already used the dijon twice. By recipe four, the chicken broth and potatoes I bought for the honey mustard chicken did double duty in the Greek sheet pan dinner.

How the overlap works

Garlic is in everything, obviously. But the more interesting overlap is the dijon mustard โ€” it’s in the balsamic chicken marinade, whisked into the bruschetta pasta dressing, and is basically the entire point of the honey mustard chicken. One jar, three recipes.

The balsamic vinegar does similar work: it anchors the chicken and lightens the pasta. And the potatoes bought for the honey mustard bake carry straight into the Greek sheet pan โ€” same prep (peeled and chunked), different seasoning.

What worked well

The honey mustard chicken is a RecipeTin Eats recipe and it’s genuinely excellent. The sauce is sticky and caramelised and the bacon makes the potatoes absolutely worth the effort. It reheated well too, which matters when you’re cooking for the week.

The bruschetta pasta was the surprise of the week โ€” faster than it looks and bright enough to feel like something different even though it shares most of its condiments with the chicken.

The one-offs

Feta and ground beef are the only ingredients in the Greek sheet pan dinner that don’t appear elsewhere. If you wanted to tighten the list further, swapping that recipe for something that uses chicken thighs would shave off two more line items. But the variety was worth it.

The shopping strategy

Buy one large garlic bulb and use it across everything โ€” you’ll need at least 8 cloves total. The balsamic vinegar and dijon mustard will feel like big upfront purchases if you don’t already have them, but they last and you’ll use both multiple times this week alone.
